Red pepper and Tomato Chicken Tortilla

If you haven’t figured out by now I try to do all easy quick recipes (well for the most part ;) ).  I just want to throw stuff together and eat!  Who doesn’t? This one is SUPER easy and is done in like 10 minutes!

I will be honest I just sort of threw this one together and never measured so use your discretion on this but it was a hit with my family!

Ingredients

5 Tomatoes
1 Red Pepper (I used only half but most people like peppers)
1 LB chicken breast cooked (I cook a lot of chicken at once then freeze it so I can just throw it in when I want it later)
These next few I just threw in until I liked the taste
Lime juice
Olive oil
Raw Spinach leaves
Salt
Black pepper
Curry (Optional)
Soy sauce
Paprika (optional)
Splash of Balsamic Vinegar

Directions 

Chop up the chicken:

 

Cook together the tomatoes and the red pepper until softened:

Throw in the chicken and cook for a minute more:

Put in all the spices to taste and cook it so that the flavors fuse (I did it for about 5 minutes)

Put in a tortilla and eat!

Yummy easy Chicken tortilla recipe!
