This post is brought you to today by the number 5 as in a  5 year old who expects a “special treat” everyday after school.

The following conversation takes place in a car somewhere in Arizona at 3:05 EVERYDAY: **disclosure the very first day of school we treated him to a special treat at Ihop…

Me: How was your day honey?

J: It was good. Mom can we get a special treat today?

Me: I am not made of money honey you can get something at home. What did you do today?

J: I don’t remember the cricket fell off his stool again (don’t ask!). PLEASE MOMMY I was good today I want a special treat!

Me: It is not a special treat if we do it everyday sweetie (gotta stop trying to reason with a 5 year old they just don’t get that concept! LOL)

J: PLEASE Mommy, PLEASE!

Me: No we can get something at home

J: OH man!

*** I think we created a monster!

Anyone else have a similar conversation? I am not alone RIGHT!?

So since I refuse to go to a restaurant/donut shop everyday for my dearly loved son I thought it would fun to make something special at home that would last all week. There were a few items I needed to get at the store to make this happen. I know, I know it is still buying something, but instead of $2-$3 per treat I am spending $6 once on all the ingredients I need to make a lot of dessert so it would be like $.25 a dessert!

So off to Walmart we went.

The first thing that basically greets us as we walked in was this HUGE halloween cat!  (really?! it is almost halloween ALREADY?)

So we got a little side tracked and found all sorts of fun halloween stuff. Check out my google + story for more fun on this shop

We then got down to business to get what we needed for his “special treat”:

Since I have long ago been banned from using knives (long story) and I wanted to make something with fruit in it we went down the fruit cup aisle.  Man they have a lot of different choices!

I settled on getting Del monte (#SmartSnack) fruit cups:

We got the rest of our ingredients and headed home:

I found a recipe for Tart crusts and then another for making pear cobbler and made my own modifications.

Here is what I made:

Shell:

1 cup butter (no substitutions work)

1/2 cup icing sugar

1 1/2 cups flour

1 Tbsp

Filling: (I based it off this recipe but did a few modifications to what I liked) 

1/2 Cup + 1/2 Tbps. All Purpose Flour

1/2 Cup Rolled Oats

1/4 Cup Sugar

1/4 Cup. Butter

1 tsp. Cinnamon

1/4 tsp. Nutmeg

1/4 tsp. Ground Ginger

4 Tbsp. (Water I actually forgot this step and they turned out fine)

Directions for shells:

Preheat oven to 300

Put non-stick spray in the cupcake tins

Mix all ingredients together until well blended

It is a sticky crust. I thought I did it wrong at first because of how sticky it was:

Pinch off small pieces (don’t roll them) and put them in the cupcake tins and flatten the dough down. If you want (which I did) put the crust all the way up the side of the tins.

I thought they would never come out after I cooked them because of the stickiness but they do!

Prick bottom with a fork and if the crust bubbles up while cooking prick again. Put in the oven for about 6 -10 minutes, take out (they will not be done yet)

While that bakes do the filling:

Open up and drain the Del Monte Fruit cups 

In a bowl with the fruit (I used peach and pear) put 1/2 tsp. cinnamon, nutmeg, ginger, and 1/2 Tbs. flour. Toss until pears are evenly coated.

Put in the slightly cooked shells the fruit mix:

In another bowl remaining 1/2 C. flour, oats, sugar, 1/2 tsp. cinnamon, and butter. The texture should be slightly dry and crumbly and then add to the top fo the fruit.

Put it back in the oven until done about 15 minutes or so (I kept the heat at 300 but you could up it to 350 just watch the crust so they don’t burn).

Then eat them SOOO yummy!
